Abby brought some Aussie inspo home from her recent trip to Australia! This fresh and simple recipe sounds delicious!
- 1 avocado
- 1 tsp. lemon juice
- 1 tbsp. goat cheese
- 1 tbsp. chopped heirloom tomato
- 2 oz. wild caught smoked salmon thinly sliced
- Pinch ground pepper
- Pinch chia seeds
- 3 sprigs mixed microgreens
Slice 1 side of the avocado to allow it to sit comfortably on its side. You will stuff the avocado skin. Cut the avocado in half. Set the bottom half of the avocado aside. Remove all of the avocado from the top half of the avocado and slightly scoop the bottom half of the avocado and place in a small bowl. Smash the avocado with a spoon. Mix smashed avocado meat with salmon and lemon juice and add ground pepper to taste. Stuff the avocado shell with the salmon mixture. Top with tomato, mixed microgreens, and goat cheese and sprinkle with chia seeds.
(optional) Try the avo smash on a piece of multigrain toast with sunflower seeds!
