4 Ingredient Vegan Pancakes (by Rebecca Buckley)


  • 3/4 cup of oats
  • 1/2 a banana
  • 1/2 cup of almond or other nut milk
  • 1 tsp sweetener of choice

Optional Add-Ins:

  •     Berries
  •     Chocolate chips
  •     Cinnamon
  •     Nut or sunflower butter

1. Pulse oats in blender or food processor until it forms a flour.

2. Add remaining ingredients and blend together until a smooth batter forms.

3. Heat small amount of dairy-free butter or oil in a skillet over medium-low heat. Pour about a 1/4 cup of batter in the pan and cook for 2-3 minutes before flipping the pancake and cooking for an additional 1-2 minutes on the other side. Serve immediately with toppings of choice.

This recipe yields the perfect amount for one person but can be doubled, tripled, etc. to serve more than one!

Where are you from? Knoxville, TN.

How long have you lived in Knoxville and what do you like about living in Knoxville? I have lived in Knoxville all but 4 years of my life. I love so many things about Knoxville. There are so many wonderful local restaurants and coffee shops. Mountains, lakes, rivers, breweries, concerts, festivals and events, movies in the square, concerts in the square, shakespeare in the square, farmers markets, UT games, yoga… what’s not to love?

When and why did you begin practicing yoga? I practiced some yoga sporadically at the YMCA years ago, but I fell in love with Yoga at Blue Ridge. I started taking Yoga at Blue Ridge studio last February (2017) mainly because I needed some balance, stress relief, and positivity in my life. I honestly needed to find myself again.  I certainly found this at Blue Ridge. 

What is your favorite thing about yoga? It is hard to pick a favorite thing about yoga, I love the mind/body balance, the positive energy, the strength I have found within myself both physically and mentally, the support and friendships of the Blue Ridge community.

What is your favorite pose? Sirsasana aka headstand or Matsyasana aka fish pose

Where is the favorite place you've traveled? My husband and I love Maui. We love the ocean, beaches and sunsets. We also love Europe—Paris, Brussels, Rome and Barcelona are some of our favorites. 

What do you like to do for fun?  Travel, hike, snow ski,  and go wine tasting!

What effect has your yoga practice had on your life? It’s made me healthier, stronger and more in tune with my body.

What do people not know about you? Most people outside of the yoga studio don’t know I’m a yoga and pilates teacher. Most people don’t know how much I’ve traveled—as a child and as an adult. Most people don’t know that my husband and I collect (and drink) really good wine! Most people don’t know that my husband, Mike, took his first yoga class because he lost a bet on a football game. He came to one class and loved it!
